A pepper mill is the gift that punches far above its build time. Three hours on a lathe and you hand someone an object they'll use every day for decades.
Buy the mechanism kit first, and design around it. Every kit has its own required bore diameters and depths, and the instructions in the box beat anything I can tell you here. Drill those bores wrong and the blank is firewood.
Drill first, turn second. Always. A drilled blank can still be turned; a turned blank cannot be reliably drilled.

Genuinely, first. Every mechanism has different required bore diameters and depths, and they are not interchangeable.
Write the numbers on a piece of tape stuck to your drill press. This is a project where one wrong hole ends the project.
Crosscut your blank into the body (8") and the cap (2"). Mark them so you can reassemble them in the same orientation.
When the grain runs continuously from body into cap, the finished mill looks like one piece of wood. When it doesn't, it looks like two pieces glued together.
Drill first. Always. A round blank is very hard to hold square on a drill press; a square blank is easy.
Body: drill the large through-bore for the pepper chamber, then the smaller bore for the drive shaft, per your kit. Use a Forstner bit and go slow, backing out to clear chips.
Cap: drill its bore too.
Check for wander. A bore that drifts off-center will show as a wall that gets thin on one side when you turn.
Mount the body between centers, using the bore to locate it so the turning is concentric with the hole — not with the outside of the blank.
Rough to a cylinder with a spindle roughing gouge. Take it easy at first; a square blank at speed is all corners.
This is the fun part and the only part that's really yours. A simple gentle taper, a classic curve, a few beads — whatever you like.
One practical constraint: keep the walls thick enough. With a large pepper chamber bored through the middle, an aggressive curve can leave you with a wall a few millimeters thick that splits the first time someone grips it hard. Feel the wall as you go.
Turn the cap to match, checking the transition against the body constantly.
120 → 400 with the lathe running, then stop the lathe and sand along the grain at the final grit to remove the circumferential scratches.
Those ring scratches are invisible until you apply finish, at which point they're all you can see. Do the lengthwise pass.
Food-safe finish — mineral oil and wax, or shellac (which is food-safe when cured, whatever the internet tells you).
Assemble the mechanism per the kit. The grinder plate seats in the bottom of the body, the shaft runs up through, the cap knob threads on.
Fill it with peppercorns, grind some onto your hand, and be quietly pleased with yourself. Then make five more — they're the best gift in this catalog.
