If you build one thing to learn glue-ups, build this. An edge-grain board turns the strips on edge so the durable long-grain faces up — harder wearing than a face-grain board, far simpler than end-grain.
The whole project lives or dies on one skill: getting the mating edges straight and square so the joints close with light clamp pressure. If you have to crank the clamps to close a gap, the joint is fighting you and will telegraph a line forever. Fix the edges, not the clamps.
Hard maple is the default for good reason — tight-pored, food-safe, and it takes a beating. Cherry or walnut work identically if you want color.

A board foot is a volume, not a length: 144 cubic inches, or a piece 1″ thick by 12″ wide by 12″ long. The “≈” note beside each row shows roughly how much 3/4″ × 6″ board that works out to.

Start with rough or surfaced 4/4 maple. Get one face flat and one edge square to it — jointer, hand plane, or a table-saw sled. This is the whole project. Every gap in your finished board traces back to an edge that wasn't straight here.
If your stock is cupped, flatten it now. A cupped strip glued into a panel puts the whole panel into tension.
Rip six strips at 2" wide, 19" long. Keep the offcut faces marked — you'll want to alternate them.
Rip them all in one session without moving the fence. Six strips of identical width is what lets the panel close cleanly.
Stand the strips on edge and shuffle them until the grain looks right. Alternate the growth rings (look at the end grain — flip every other strip so the arcs face opposite directions). This makes the panel's seasonal movement cancel out instead of compounding into a cup.
Draw a large V across the top with a pencil. That mark is how you get them back in order after they're covered in glue.
Clamp it up with no glue. Look at every joint. Any gap you can see now is a gap you'll see forever.
Check the panel is flat across the clamps. If it wants to bow, add clamps from the opposite face to counteract it. Sort all of this out now — you cannot solve it once the glue is on and the clock is running.
Lay the strips flat, roll glue on every mating edge — a continuous film, no dry patches, and don't be shy. Titebond III gives you about 10 minutes of open time; work with intent.
Stand them up, clamp from alternating sides, snug until you get a light squeeze-out bead along the whole joint. Snug, not gorilla. Over-clamping starves the joint of glue.
Scrape the squeeze-out with a chisel once it goes rubbery (about 45 min). Scraping it wet smears glue into the grain and you'll find it later when the finish won't take. Leave it clamped overnight.
Out of the clamps, flatten both faces. Through a planer if the board fits (take light passes, alternate faces). By hand: a scrub or jack plane across the grain, then a smoothing plane, then a card scraper.
Trim both ends square. A crosscut sled or a miter saw with a clean stop block. Final size lands around 12" x 18" x 1.5".
Break every edge — a 1/8" roundover bit, or four passes with a block plane and sandpaper. A sharp 90° edge on a cutting board chips out the first time someone knocks it on the counter.
Optional: rout a finger groove on each end for lifting. Nice touch, not required.
80 → 120 → 180 → 220. Don't skip grits; each one is only removing the scratches from the last.
Before your final grit, wipe the board with a damp rag and let it dry. This raises the grain. Sand it back at 220 and it will stay smooth after its first wash instead of turning fuzzy.
Flood the board with food-safe mineral oil. Really flood it — end grain drinks. Let it sit 20 minutes, wipe the excess, repeat until it stops absorbing. Usually 3–4 coats over a day.
Finish with a beeswax/mineral oil paste if you want water to bead.
Tell whoever gets it: hand wash, never the dishwasher, re-oil when it looks dry. A board treated that way lasts decades.
